DELICIOUS BEANS AND GLUTEN FREE CORNBREAD!!

If you happened to read our post about  Dinner Menu Planning you will see we plan to eat two meatless meals a week to save on money.  This was our first meal and it was delicious!!!!  This was Steve's Famous Beans and one of my Fave's Gluten Free Cornbread!! (low fat and low sugar) Here are the precipice's for these items if you would like to try it!!


Steve's Famous Beans
1 lb Pinto Beans
1 can of Tomatoes
1/2 Onion (chopped)
2 gloves of garlic or 2 tsp of crused garlic
1 cup of coffee
Dash of Cumin
1/2 Tablespoon of salt
1/2 tsp Chili powder

Put all ingredients in crockpot cook for about 6 hours or so!! You will need to keep eye on water level. The beans have a tendency to soak up the water.

TIP:  Great item to freeze for  future meals.

Gluten Free-low sugar and fat Cornbread
(My hubby said it was delicious, but needed more fat so I added a little more oil to the recipe!)

2 Cups of Cornmeal
1 Cup of Pamela's Mix (or any gluten free mix)
1 egg
1/2 to 3/4 cup of oil 
1 Tablespoon Honey
1/4 cup of sweetener (you can use agave, or whatever you like)
1/2 cup 1% milk
Add some water till mix is clumpy

Bake at 350 for 20 minutes
450 for 5 minutes to get brown on top.
Top with favorite topping!!! 

TIP-I like to use Welch's low-sugar jam.  It has only 10 grams of natural sugar in 1 tbs.
